Is it possible to have links to start up XBMC in video, music, pics etc categories directly from the desktop?

Eg. an icon on my windows desktop starts up XBMC in the main video section??

No.

You need to change XBMC so it allowed command line arguments to tell it where to start. That wouldn't be very hard, but I don't think it's high on anyone's todo list at the moment.
