Why would you want a headless webkit on iOS? don't you want to see the pages on the phone?
PhantomJS is a great tool for scraping and could be valid to use in XBMC for scraping, but I suspect you want it for browsing the web in xbmc, which makes no sense to use PhantomJS for.
And if you aren't talking about using it in XBMC then this is extremely offtopic and I would suggest you to talk to the PhantomJS guys and see how much they would like to port a big chunk of Qt to iOS
