I could've sworn my original ATV had 1080p option for the HDMI, but I can't seem to find this on the ATV2? Am I missing something here?

atv2 is 720p max AFAIK

Correct. The ATV2 only outputs at 720p. It can decode and play 1080p material, but it's output at 720p. GUI is 720p. Everything is 720p. 720p. There. I said it. A lot. 720p.
