I have my HTPC with a GTX285 hooked up to my 120Hz LED1080p.

The graphics default to 1920x1080 however, as with most computer monitors, it's 60Hz. I can create custom resolutions which would give me 1080p and 120Hz.

Is this worth it? Are there any dangers associated with it?

120Hz is the internal refresh rate, the external is not changed.

Your TV can display 120Hz, but it can't accept anything higher than 60Hz because HDMI doesn't have enough bandwidth to transfer that much information per second. The TV is always refreshing at 120Hz, but it either doubles frames (for 60Hz) or interpolates in between frames to smooth out motion. 720p120 is probably doable, but would probably not look good anytime you weren't showing video. Also, what video source would you be sending that has 120 fps... since no source comes that way currently? There's no point to doing this IMO.
