You may get a performance increase from an extra ram stick but I wouldnt lose any sleep over it, especially if its for a htpc..

so shouldn't really affect emulator performance?

1 vs 2 shouldnt make any difference on most motherboards

Dual channel is faster in benchmarks, but noticable in XBMC? Don't think so.

For mini-ITX HTPC builds (2 RAM slots) I've been using 1 x 4GB so that it's upgradeable to 8GB in the future w/o having to remove anything. For HTPC, there's no noticeable difference in performance.
