Is it possible to modify the right-click menus, such as
- when you right-click a program in the EPG
- when you right-click a recording widget in live TV?
They don't seem to be defined in any XML files in the skin, unless I'm missing something.

no, these are filled internally by Kodi. You can add buttons to it by adding button controls to the grouplist in DialogContextMenu.xml but you can't remove, reorder or things like that.
