I'm using aeon Nox 5 redux with kodi 14.2 and I can't seem to find the toggle for hiding/unhiding watched shows.

Anyone help?

This isn't redux but if I remember correctly it's about the same. Press the up arrow to open the side menu and you'll see one of the selections that toggles between "Watched" "Unwatched" and "All".
