I've switched to using a nightly build, following instructions here: http://wiki.xbmc.org/index.php?title=Ins...htly_build

but how do I update once a new nightly is available? Do I just do the same again or do I need to downgrade/uninstall the previous nightly?

Just do the same again, the new build will overwrite the old one but your settings etc will stay intact.
