I love the ability to add a submenu for Movies, but I noticed that when it displays names, is sort by first name, not surname....
Is there a way to remedy this?

nope, that"s not possible.
afaik, xbmc has no knowledge of which part of the name is first / sur.
the entire name is treated as a string an the list is sorted by first character.
