I'm have issues with my atv2.... Most noticeably its failing to obtain network date and time on boot up.

I'm thinking it needs restoring... But I don't think, I'd be able to jailbreak I restore to latest version.

Any help or ideas?

The stickies and FAQ in the iOS forum clearly state that we don't do jailbreaking questions. They also mention sites that do.

You can still restore to 4.3 and have an untethered jailbreak... or to 4.4.3 if you don't mind a tethered jailbreak. Take a look at the FAQ in my signature.
