Here are my HTPC specs:
Windows 7 Ultimate x 64bit
Intel Core i7 965 extreme 3.2 Ghz w/ 3gb 1066mhz ram.
2 x 280 gtx nVidea graphics cards linked together via SLi
Harddrives:
1 x 250gb @ 7200rpm
1 x 1tb @ 7200rpm
It's by no means a horrible lag, but almost like small hiccups here and there.
I'm projecting onto a 90" screen w/ a Sony VPL HW30AES.
Anyone have advice to curing my machines hiccups?

Well, with that setup it really shouldn't lag at all. If my Atom D525+ION2 can display 1080p without any lag, that rig should also (it's gotta be 3-5 times the raw CPU+GPU power...).
I'd start by looking into the Windows environment to see if there's anything causing the short drop outs, starting with testing if disabling antivirus makes a difference. I know some antiviruses are bad at stealing disk access time right after an update.

Try toggling the fake fullscreen/ true fullscreen option in the XBMC settings.
Main HTPC:

Obviously not an XBMC only related problem then.
- HDD driver
- HDD firmware
- other drivers
- other firmware
checked?
- Media file/s moved from one HDD to other and tried?
- Cables (SATA primarily) swapped, checked and disconnected/reconnected?

Found the problem. The projector has different preset viewing modes.
It was in the mode: 'cinema 1'
I changed the mode to: 'game' and since then all the glitchy lag has ceased.
How sad is that? lmao...
