Man what a mess. Just FYI. Devs are no dogs who eat each bone you throw at them. Your log is really big and its full of trying afp and nfs stuff where nobody knows what you even tried to do.
Next time get me a clearer log. (e.x. start xbmc - produce the problem once - close xbmc and get the log)
1. Don't use AFP - it won't work for you as of the log
2. Tell me which NFS server you use. It looks like the nfs server is not running or portmap on that server is not running. You could try to add the nfs source by hand (nfs://IP/exporteddirectory). Try restarting the nfs server.
3. Read the NFS Wiki entry from my signature. Read it completly and try to understand it. Latly all NFS errors where configuration issues which where produced by users which don't read the Wiki. Pay special attention to the privileged ports thingy (e.x. unsecure flag or -N flag on OSX - depends where you run your server).
4. Describe what you do when you have a problem - again we are neither dogs which smell errors - nor are we magicans whith working crystal balls.
