If you go with #2, try it without the video card.
If you're happy with the result you can sell the GT430 and reduce the price further ... some say you need a card, some say you don't. At least you will have the option to decide without spending money.
Less power, less heat = less noise.

I am thinking option 1 but now I am tempted to swap the i3 2100 for a i3 2105.
Is the HD3000 going to make any difference compared to the HD2000?

No, none at all for 1080p. I have a HD2000 and HD1000 HTPC and they look identical to HD3000 for 1080p and XBMC use. If you can get the i3 2105 for the same price (or less) than the i3 2100 then get it. If not save your money and use it towards a SSD or storage drive.

Go without the graphics card and if for any reason at all you want to add a card then add one. I use XBMC on my i3 2100 and G620 with no issues at all using the iGPU.
