I have "hide watched" enabled on my library, but sometimes i fall
asleep and miss the end, consequently I have to navigate to un-watch the last episode .
Would be nice if last watched episode received a different flag "last watched" and stayed visible / greyed out
even when "hide watched" option is enabled

You could make your own smartplaylist which retrieves the list of episodes ordered by "last played" descending (and maybe limit it to 10 items or so). That way you can fall asleep during different shows and have a list of candidates that you haven't finished watching.
