HTPC and VM Host Combo

XBMC hardware experts, I'm looking to build a PC that will host 5 Windows 7 VMs and function as an XBMC media center. I'm planning to install Windows Server 2008 R2 Standard with HyperV and then run the 5 VMs on top. The only other thing I'm planning to run on the main Windows installation is XBMC for playing mainly MKVs. I'd like to be able to play 1080p and bitstream Dolby TrueHD and DTSMA via HDMI (for sure) and/or optical (if possible as my Denon receiver needs an optical input to be able to output via optical for my Tritton headphones). I already have a nice 4U server chasis (holds 12 hard drives and large ATX mobos), Corsair TX750 V2 power supply and 2 x 1TB WD Black SATA3 drives that I want to run in RAID 1. I'm hoping to be able to get away with only having to purchase a CPU, RAM and motherboard. I also have an IBM m1015 SAS card flashed to LSI forward for JBOD that I have 5 x 2TB WD Green drive connected to and I'm hoping to be able to use the PCI Express 2.0 x16 slot on the motherboard.

I've always been partial to Asus motherboards, but if there's something better out there then let me know.
