If you're using a mouse, moving the mouse pointer automatically displays the player controls OSD while watching a video and, after a few seconds of mouse inactivity, the OSD will close on its own. If using keyboard, M or Enter will display the OSD. Pressing M, Backspace or Escape will close the OSD. For a remote, you should be able to close the OSD using a button that sends the Back or PreviousMenu actions.

I don't think so. There was a feature request back in 2009 for something like this, but don't know if any has happened with it since then: http://forum.xbmc.org/showthread.php?tid=64347
