XBMC should be able to save all its settings and add-ons out to a USB drive. I run multipul media boxes in my house for different rooms and it can take me forever and a day to replicate those settings on different machines. Lounge, Kitchen (music), Dining Room, My Bedroom and Kids Bedroom.
I know there is a addon called backup, but i'm talking about addons too, skins, extras's .

If your paths are all network shares then as teeedubb said all you need to do is copy the entire userdata folder, the only change you'll need to make is editing the path to the userdata folder in guisettings.xml as it'll contain the current users directory which will obviously need changing to match the machine it's on.

OpenELEC can also be transfered completly to a new system with its backup/restore feature.
I recently did it with my new Haswell NUC and it worked great.
