Hi
I would like to create a profile for my son in XBMC and set it to only have access to certain folders of movies and music. Is this possible or it will have full access to my HD?

Yep,
profiles (wiki) + media source locking (
Media_sources#Locking (wiki)) should do this. You want media source locking in addition to profiles, because it can be possible to navigate outside of the sources in a profile if one tries hard enough, so the password gives a hard wall in case they do.

But is possible put a password in a specific folder in a external hard disk? I need that all music, pictures and movies are enabled to view. But when I enter in specific folder, is necessary put a password to list this folder.

Yep, that's exactly what the media source locking does.
