ok i have been searching and i cant seem to find a definitive answer. is it at all possible to take the channels from the free cable add-on and make those accessible to watch on my 360?

In theory, yes, but the 360 is picky about the format that videos come in, and XBMC doesn't currently do any of the neat tricks that other UPnP servers do to get past that. However, the ability to share most add-on video content via UPnP has been added to development builds (wiki), so it's a step in that direction.
