Hi,
I have tried to find a more detailed explenation of this but come to a dead end. I have normally used 'eac' to rip my CDs to flac but have decided to give the built in ripper a try. Can someone please advise which is the best level to choose for optimal quality. Many thanks

It depends.
I strongly believe that a lot of subtible differences audiophiles realises in Computer Audio are related to artifacts generated by the system itself especially by the DAC rather than by the ripping process.
On the other hand, the effect of potential offsets on WAV files ripped from CDs can be audible as well. But I expect this effect should be managed by the ripping Software anyway.
For many good reasons I use dBpoweramp for ripping. The "AccurateRip" function provides a good indication of a bitperfect result.
The Encoding Level 5 (default) is ok and should result in optimal quality.
