Do not even do it.
Most of them are full of crap-ware and either way you still have to change setting anyway according to your home setup.

Run clear. Despite the (some times) low price tag, most of these are really not worth neither price nor the hassle.Highly suggest you look at either a celeron NUC, or a laptop with HDMI output. Depending on the laptop, you might get away with a used one with a broken screen (if it does HDMI output from post) - these can be had for very little on ebay. But if minimal hassle is what you're looking for... NUC. Intel or some other NUC board based - Gigabyte also has a good selection.

If you can suggest a specific set up, that would be helpful.

If the price is right, go for it. Then re-install Windows to wipe out all the bloat wares....

I'd go with that and run OpenELEC though. But of course, you'd need some PC expertise and since you said easy, and you're having trouble getting HDMI output to work I dunno if that's for you lol. Probably just want to go with the option he presented already.

I'm not sure about the Gigabyte, but the Mini Computer on AliExpress is fanless (which was a decision factor for me). I had no problem with delivery (to Europe). Running OpenElec without problems.
