NAS Migration Advice

Hello guys,
today I have a homemade NAS with a motherboard E35M1-M Pro, 4GB of RAM and 8 disks with the following dimensions: 4x3TB, 3x2TB and 1X1TB, the OS is OpenMediaVault.
I want to buy 4 new 3TB drives to create a raid 5 or maybe analogous to avoid losing data. My biggest problem is that I cannot move my data nowhere atm. I have read that there are software raid solutions that allow you to create a first array and then add additional disks.

What do you advise me to do? I evaluate also the possibility of changing the operating system.

FlexRAID may work, you can either start with a setup and add drives, or just copy all your data to new drives and then create the array.

Not sure about other solutions, I'm sure there are more.

Unraid allows you to add drives one by one. So you can move over a contents of one drive and then put it in the array and clear it.

Its a bit time consuming but it would do what you are looking for,
