To remove individual buttons from the menubar, you can edit the includes_MenuBar.xml. But be aware that you need to do the edits every time the skin is updated. And you can not do any view option changes if you remove the button - unless you manually edit the guisettings.xml file.
You can hide the menubar, only showing it when focused in the Skin Settings -> General -> Hide top options menu bar.
You can completely hide the entire menubar in the Skin Settings -> General -> Enable kiosk mode.
