Where are the picture settings for the home page set? The pictures I am referring to are the ones that have a continually change and match the theme of the button highlighted.

I only found the following that says that they can be changed in Home.xml but I can't find the string mentioned.

See Home.xml - it's reasonably clear. There is a set of multiimage controls near the top of it, and they're visible based on which control is active. Just change the <imagepath> tag to point to somewhere else (eg mypics), dump the images in that folder (off the media/ subfolder of the skin folder) and away you go.
