Are there any *really* simple skins? Like to the point where they forgo things like fanart and banners and just provide lists?

bmfrosty, most of the Apple inspired skins can be very simple if you are prepared to turn off a few settings (background images for one). In fact I dare say most skins will allow you to "dumb" them down, just visit the skins settings screens and turn off all the settings that provide extra eye candy.
