Is there anyway to turn off the non-forced subtitles?
I've seen it suggested that this can be done by bringing up the floppy X looking menu (context?) with a mouse, but I'd prefer leaving the mouse disabled and using only my mce remote.

You can bring up the context-menu with the remote as well, (and yes that is where you can disable subtitles for all videos).

If your using the mce remote when a video is playing press the green menu button and goto the audio function.
you will find the option in there to turn off the subtitles. you can then save that as default.
otherwise like you said you can do this once with a mouse.
