I understand how to add new content in the Videos section, and then how to Set that content to indicate its movies/tvshows, etc.

But when looking at the Videos content, there is also a default Movies Category. How do you set this default Category to a folder location? It seems to set to default to my C:\ folder path. Or is there a way to delete this default Category?

No, not setting the Content. The Video's menu includes a default Movies catagory. I can set the content of this item to movies, tvshows, etc. But I can't seem to set this category to a specific folder path. I don't see where to browse and set a folder location for this item like you do when adding a new source location.

That's what you are doing with "set content" if I understand you correctly.
The Video Library is "virtual", it has no fixed folders, the movie node can contain movies from many different folders.
