edited to note the fact that I am an idiot and got things working.
I redid everything from the ground up, made sure I was using SMB and things look like they are working now.
I apologise if I wasted anyone's time.

You are correct you cannot use library mode until at least 1 movie has been scraped.

Mapped drives scan in fine.

You can't use upnp as a source for the library. Change the source type, scan content in and your sorted.

As it turns out
(and I don't know why I missed that important piece of information after the hours of reading on the forum, etc.)
I somehow assumed that UPnP was the best way to set up my connection but as you mentioned prae5, that doesn't work.

Once I reconfigured and am using SMB shares, it is all good.

Thankfully it was something very simple!
