since it seems that a plugin is a "stripped down" version of a script, how do i go about adding a GUI to a premade plugin? is it as easy as creating a GUI?

Pretty much. Whether it's easy or not is up to you to decide.

I recommend against doing a script if a plugin suffices, as it's not so easy to maintain a UI and still make it look good in all skins...
