A significant portion of my music collection (about 1/3) seems to be missing fanart, but when I check the artist info there are tens of "thumbs" all of which would be great as fanart.

Is there anyway to move these files over to "fanart" because there were no remote fanart finds?

Upscaling those thumbs to fanart sizes would look terrible. Not to mention they all have different aspect ratios causing either stretching, or empty spaces.
