[Apple TV2] best file format for performance

I have spent a few hours viewing threads and cannot find an answer. I would appreciate guidance from those who have tread this path before.

What video format gives best performance with the [ATV2]?
My file server is running Suse 11.3 and I am currently sharing via SMB.
I could do wireless or 100MB wired to the ATV2.
Storage space is not a concern for me but I do have to use subtitles as my wife is hearing impaired.
I currently rip .iso's because they are fast to do.

720p h264 in mkv containers.
