Is there any way to stream my slingbox pro-hd to my jailbroken untethered Apple tv2 via the xbmc app I've installed to it?

First we have to wait for my Slingbox code to be added to XBMC (read more about it here: http://forum.xbmc.org/showthread.php?tid=82597 ). Once that happens, in theory you should be able to do just that (I'm assuming the Apple TV2 XBMC version is a full version with all XBMC parts to it ... I haven't actually looked into this new port).
