Live installs, but won't boot

Hi there,

I've been successfully running XBMC Live off of my HD for a while and I decided to upgrade to a full on HTPC case and some extra drives. I have a feeling that the grub loader isn't properly modifying the MBR or something to that effect. Prior to upgrading I still had issues with booting off of the single hard drive. I had to install XBMC Live twice, using the guided resize partition option for the 2nd install. At that point, grub would let me choose which install to boot from and I'd have to select the 3rd one in a list of 4 options... never quite understood why, but it worked. Now I need to get down to the bottom of it and understand what the real problem is.

Antec Fusion Max Remote HTPC case
Asus A8N-SLI Premium mobo w/1GB dual channel RAM
AMD Athlon 64 3500+ processor
nVidia 6600GT PCI-e video w/HDTV out
Boot drive: Seagate 7200.11 320GB SATA
RAID 1: 2 x Seagate 7200.12 1TB SATA
DVD: Sony something or other... works fine and is ATA 33
