I was just wondering if there is an option to update XBMC automatically as soon as a new version is released, is there a way to do this? I cannot find any setting, but maybe it's hidden or I simply cannot find it.

What about Skins, how can I auto-update them?

skins yes, those are add-ons. they're autoupdated by default. but since you're running windows you really should grab 10.1 as 10.0 has a nasty bug related to skin updates on windows.
