If Kodi does not crash when you launch it but only show a black then the kodi.log file should be created.
Now my guess is that your Kodi app is running in sandboxed mode and your Kodi.log file is somewhere in one of the directory of this folder/var/mobile/Containers/Data/Application/....
When nothing was working I deleted everything and reinstalled. Same problem...and no log.
Rebooted, rejailbroke etc.... no change.

Renamed the kodi.old.log to kodi.log - no change.
Deleted any preferences w/the Kodi name associated. (there was the kodi directory, and a kodi.old.log)
Uninstalled, reinstalled...black screen.
Downgraded to different versions...black screen...

I 'could' do a factory reset and rejailbreak. Risk of iOS not being signed and have no way to re-jailbreak.
(side note ~ will be looking to do a home kodi server at some point so the jb is not as required)
