Currently it is not possible to exclude specific add-ons from showing up in the add-on update list.
It is indeed possible to disable auto-update for specific add-ons via
Add-ons > My Add-ons > (navigate to the add-on) > Information > Disable "auto-update"
but this requires auto-update being enabled globally (which is not being wanted necessarily anyway) and does not exclude the specific add-on from showing up in the add-on update list anyway.
Which can be very annoying if there is an add-on that should be prevented from being updated in any way, which could also happen accidentally.

Currently it is only possible to accomplish this as a workaround by messing around with the according addon's addon.xml file as described here:

So this is a feature request to make it possible to exclude specific add-ons completely from the add-on update list.
